Last Nights Dinner



Last night we had chicken scampi, twice baked potatoes, and asparagus. Being that the chicken came out AWESOME I figured I would share the recipe. So here it is!

Chicken Scampi
Ingredients:
1/2 cup butter
1/4 cup olive oil
1 teaspoon dried parsley
1 teaspoon dried basil
1/4 teaspoon dried oregano
3 cloves garlic, minced
3/4 teaspoon salt
1 tablespoon lemon juice
3/4 chicken breasts sliced

Directions:
1. In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts. Add the parsley, basil, oregano and garlic and salt and mix together in the skillet. Stir in lemon juice.
2. Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter/margarine can be added if needed.

Twice Baked Potatoes
Ingredients:
1c Cheese (any kind that you like
4 russet potatoes
1/4c sour cream
1/4c white bean puree or 1/4 white puree (it is cauliflower and zucchini pureed together)
4 strips of bacon/turkey bacon
1/4c sliced green onions

Directions:
1. Heat oven to 350 degrees
2. Wash potatoes and put in the microwave for 4-5 minutes. Remove potatoes and let cool.
3. In a bowl mix together all ingredients while waiting for the potatoes.
4. After the potatoes have cooled cut in half and scoop out the inside. Put the inside of the potatoes into the bowl of ingredients and mix.
5. Fill the skin of the potatoes with the mix and bake for 25-30 minutes.
